Vegan Chocolate Avocado Mousse
Instructions
1. Cut the avocados in half, remove the pits, and scoop out the flesh.
2. In a blender or food processor, combine the avocado flesh, cocoa powder, coconut milk, maple syrup, vanilla extract, and a pinch of salt.
3. Blend until smooth and creamy, scraping down the sides as needed.
4. Taste and adjust the sweetness as desired by adding more maple syrup.
5. Spoon the chocolate avocado mousse into serving glasses or bowls.
6. Chill in the refrigerator for at least 2 hours before serving.
7. Garnish with fresh berries or shaved chocolate if desired.
