Instant Chicken Curry

Instructions
1. Combine chicken, coconut milk, curry paste into Instant Pot.
2. Cook at high pressure 8 minutes (or 12 minutes if frozen chicken).
3. Do a quick pressure release after done.
4. Remove the chicken from the Instant Pot using a set of tongs and set aside to rest.
5. Select the 'saute' button, and add in the lime juice and vegetables. Cook, stirring frequently, for 5-10 minutes.
6. Using oven mitts remove the stainless steel pot from the Instant Pot.
7. Slice the chicken and add back to the Instant Pot.
8. Eat with rice.
